Marble vs quartz comes up in almost every kitchen conversation we have, and for a high-traffic kitchen the honest answer is not a tie. Quartz holds up better.
That is not a knock on marble. We fabricate and install both, and marble is one of the most beautiful materials that comes through our shop. But beauty and durability are two separate questions. If your kitchen sees real cooking, real spills and real traffic, these two surfaces behave very differently after a few years.
Here is what actually happens to each one, what maintenance each one asks of you, and where marble genuinely is the right call.
Marble vs Quartz: The Short Answer
If your kitchen is the center of the house, quartz is the safer surface. It is non-porous, it never needs sealing, and acidic food does nothing to it.
Marble is porous and acid-sensitive. Lemon juice, vinegar, wine, tomato and a lot of common household cleaners will etch it, and no sealer on the market prevents that.
We do not recommend marble for an active kitchen. We will still fabricate it if you want it, and we will make it beautiful, but you should go in knowing what you are buying. Marble is a maintenance and patina material, not a worry-free countertop.
What Marble and Quartz Actually Are
Marble is natural carbonate stone
Marble is quarried. It formed underground, came out of the earth in blocks, and was cut into slabs. That is why no two slabs match, and why the veining across a marble island is genuinely one of a kind.
It is also why marble behaves the way it does. Marble is a carbonate stone, which means it reacts chemically with acid. That reaction is what etching is. Marble is also porous, which is a separate issue, and it is the reason marble gets sealed.
Quartz is engineered
Quartz is roughly 90 percent or more crushed natural quartz bound together with a polymer resin. The mineral content is natural. The slab itself is manufactured.
That resin explains almost everything about how quartz performs. It is why the surface is non-porous and never needs sealing, because there is nothing for a liquid to soak into. It is also why heat is a problem, which we will come back to.
Why Marble Struggles in a High-Traffic Kitchen
Etching and staining are two different problems
This is the part that trips people up more than anything else about the material, so it is worth separating clearly.
A stain is something soaking in. Oil, wine, coffee. That is a porosity problem, and a good impregnating sealer helps a lot with it.
An etch is a chemical burn. The acid eats into the polished surface and leaves a dull mark. It is not sitting on top of the stone, it is in the stone. A sealer does not stop it.
In a working kitchen, acidic contact is constant and mostly invisible. A lemon wedge left on the counter. Splashed vinegar. A wine ring nobody wiped up. Even an everyday all-purpose cleaner. Over a year or two you get a pattern of dull spots around the sink and prep areas. That is the normal outcome for marble in a busy kitchen, not a defect and not a failed installation.
Honed or polished
If you have decided on marble anyway, the finish is a real decision and it is worth making deliberately.
Polished marble resists staining better. The tighter surface gives liquids less to grab onto.
Honed marble hides etching and scratches better. It is already a matte surface, so a dull mark does not read as a dull mark. It is more open than polished, so it wants a little more attention on the staining side.
Neither finish prevents etching. You are choosing which problem you would rather look at.
Quartz Has One Real Weakness, and It Is Heat
Quartz is not indestructible, and it would be dishonest to sell it that way. The same resin that makes it non-porous also makes it heat-sensitive, and the risk most people do not see coming is thermal shock.
Thermal shock is what happens when a very hot pan lands on a much cooler slab. The temperature change is fast, the material expands unevenly, and that stress has to go somewhere. It finds the weakest cross section, which usually means near a seam, around a sink or cooktop cutout, along an edge, or anywhere the material is thinner. A crack from thermal shock is not a maintenance issue. It is damage.
Trivets are not optional on quartz. That is the one habit the material asks of you, and it is the trade for never having to seal anything.
One other limit worth knowing: quartz is an indoor material for most manufacturers, because sun exposure affects the resin. Caesarstone offers a small number of colors rated for outdoor use. If your project includes an outdoor kitchen, porcelain, quartzite and granite are the materials to look at instead.
Maintenance: What Marble and Quartz Ask of You
Quartz asks for almost nothing. Soap and water. No sealing, ever, on any brand.
Marble asks for a routine. Wipe acidic spills right away rather than at the end of the night, use a cleaner made for natural stone, and keep it sealed.
On sealing intervals, we do not give a flat number of months, because a calendar interval is a guess about your kitchen that we cannot make from here. How you use the counter is what determines it. Run the water test instead. Put a small puddle of water on the surface and watch it. If the stone darkens within a few minutes, the sealer is thin and it is time to reseal. If the puddle sits for thirty minutes and the stone underneath is still clean and light, the sealer is doing its job and you can leave it alone.
The first seal is included with your installation. Later reseals are a paid visit, and plenty of our customers do them at home once we show them how. The product we recommend is STAIN-PROOF Dense Stone Impregnating Sealer, which you can buy at Arizona Tile here in San Diego County.
What Marble and Quartz Cost in San Diego
Installed pricing across San Diego County runs about:
- Quartz: $70 to $130 per square foot
- Marble: $75 to $250 and up per square foot
Marble has the much wider range because the slab itself drives the number. A common white marble sits near the bottom of that range. A dramatic statement slab with heavy veining sits at the top, and with genuinely rare material there is no ceiling.
Both materials carry the same fabrication costs on top of the slab. A sink cutout runs $200 to $340 with faucet holes included. A cooktop cutout runs $150 to $250. Carved edge profiles run $10 to $30 per linear foot. Tearing out your existing counters runs $300 to $800. We charge one rate across San Diego County, so where you live does not change the number.
Where Marble Actually Belongs
None of this means do not buy marble. It means put it somewhere it can be what it is.
A bathroom vanity is the best use we know of. Low traffic, very little acid, and the surface stays beautiful for a long time with almost no effort from you. Powder rooms, master baths and other low-use areas are where marble earns its price without asking much in return.
The customers who stay happy with marble in a kitchen are the ones who wanted the patina in the first place. They understand the surface is going to change, they consider that part of the material, and they are not upset the first time a lemon leaves a mark. If that is genuinely you, marble in a kitchen can be wonderful. If you think you would be upset, we would rather tell you now than after it is installed.
If You Want the Marble Look in a Working Kitchen
There is a better answer than compromising, and it is quartzite.
Quartzite is natural stone with marble-style veining, and it does not etch. Taj Mahal, White Macaubas and Mont Blanc all deliver the light, veined look most people are picturing when they say marble. It does need sealing on the same use-based schedule as any natural stone, and it runs $80 to $200 and up per square foot installed.
Be careful with names when you are shopping, because a fair amount of material gets sold as quartzite that is not actually quartzite. If a slab is labeled quartzite and the price seems soft for the look, ask questions before you commit to it.
The other route is quartz in a marble-look pattern. The veining is manufactured, so it repeats across the slab in a way natural stone never does, but you get the look with no sealing at all.

How We Fabricate Marble and Quartz Differently
Marble and quartz are fabricated differently, and it shows up in a few specific places.
Slab layout matters far more with marble. Because every slab is unique, where a seam lands and how the veining runs across an island is a decision rather than a default. We lay the pieces out on the actual slab so the veining flows the way you want it to. With quartz the pattern is consistent from slab to slab, so layout is mostly about seam placement and getting the most out of the material.
Edge work is the same process for both. Every profile we fabricate is built up to at least 1 1/2 inches. Our standard is 1 5/8 inches, which is what about eighty percent of our customers choose, and 2 inch and 2 1/4 inch builds are available. We do not charge for the taller miter itself, only for the second layer of plywood underlayment it requires. We cut on a CNC bridge saw and a waterjet, and we fabricate ten edge profiles in-house.
Timing is the same either way. A typical kitchen runs about seven days from template to install. A bathroom is usually two to three days.
Frequently Asked Questions
Does sealing marble prevent etching?
No. Sealing addresses staining by slowing how fast liquids absorb into the stone. Etching is a chemical reaction between acid and the marble itself, and no sealer prevents it. If a product claims otherwise, be skeptical of the claim.
Is quartz heat resistant enough for a busy kitchen?
Quartz handles everyday warmth without any trouble, but it is not heat proof. The resin binder does not tolerate a pan straight off the burner, and the bigger risk is thermal shock cracking near seams, cutouts and edges. Use trivets and you will not have a problem.
How often does marble need to be sealed?
There is no single interval, because it depends on how hard the counter is used. Run the water test. If a puddle of water darkens the stone within a few minutes, reseal. If it sits for thirty minutes and the stone stays clean and light, the sealer is still working.
Can marble and quartz be used in the same kitchen?
Yes. Mixing materials is straightforward to fabricate, and it is one way to get marble into a kitchen without putting it where the acid is. The trade-off is that you are managing two different surfaces with two different care routines in one room, so it is worth deciding that on purpose rather than by accident.
